Joey’s Buddha Plate 🥗 * * This evening I had the privilege of sticking my feet up and watched ‘Britain’s Fat Fight with Hugh Fearnley-Whittingstall’ whilst Joey made dinner 🤭 didn’t he do good? 😍 * * Shredded cabbage, baked tenderstem broccoli, grated carrot, baked chickpeas and sweet potato with paprika and spices, lightly fried cherry tomatoes and hummus drizzle 🤩✨ he’s very proud of himself and he should be because it was delicious 👌🏼 * * It’s a relief because I always get nervous when other people cook for me. So I realize I don’t post many food pics because I’m too busy enjoying my food to snap a quick photo! 😂—that’s something that I’m working on starting today considering how much I love food and helping others to reach healthy lifestyle goals. Meals should be enjoyed in my opinion.. no overthinking necessary. So here’s my lunch for the day.. kept it simple. Just a side note: if you haven’t been feeling too great lately, notice what makes you feel good after you consume it. I’ve discovered that for me, eating vegan 4x per week makes me feel my best. My protein choices always stumped me because growing up because animal protein was highly present in my meals and I didn’t like it all the time. I struggled with that for a long time. Now I tend to eat chicken or fish when I feel my body needs it. You can discover your dietary lifestyle this way too and see what works for you. Oh, and my lunch is a simple tuna salad with lemon, black pepper, and sweet onion with a bit of mayo. My salad is a Trader Joe’s slaw (no mayo on that ). It has on kale, pumpkin seeds and red cabbage. I opted to add kiwi because it’s one of me absolute faves! This salad made me feel light yet energized which is something I aim for during the day. Wish my kids would eat it though! 🤨 What kinds of protein do you prefer to add to your salads if at all? I think I’ll be going home to whip up a batch of these no-bake nut butter bars today. Homemade semi-sweet treats sans refined sugars are my absolute favorite to keep around and I haven’t made these in a while! 🍫⠀ ⠀ I’m really trying to move more towards this way of enjoying treats, even though it can take a lot of adjusting! Thinking about waste reduction, enjoying homemade treats is often more eco-friendly than buying packaged ones (and in this case, much healthier!!) if you source the ingredients right. The packaged ones are usually higher in sugar and more wasteful with packaging. I know it’s so tempting to just buy premade treats that are labeled “vegan” or “gluten free” or “organic” - trust me! I’m as guilty as the next guy! - but one thing @thewholefooddiary has reminded me is that these environmental problems we are contributing to today will be our children’s problems to solve. This is a huge push for me to live a less wasteful life and even though it’s a challenge, I think the first step is always being more mindful. You don’t have to get it all right on the first try, but every bit of effort makes a difference! ⠀ ⠀ (Recipe can be found on the blog)

“Happy Hens Eggish Salad,” made with tofu and vegan mayo. I purchased this premade at @fourseasonsnaturalfoods where they make it on the premises and sell it in containers in their deli cooler. Sooo delicious! Even if you don’t like tofu- it has an egg salad consistency and flavor.
